Bacon Avocado Bomb
1 egg
1 ripe, but not too soft avocado, halved, pitted and skinned
4-5 strips of bacon
1 tsp. honey
Vegetable oil for deep frying
2-3 toothpicks
Salt and pepper
Soft-boil the egg for 6 minutes. Submerge in cold water and leave to cool. Peel carefully.
A bit at a time, enlarge the pit hole in the avocado to fit the egg, then put the avocado back together with the egg inside. Wrap the “eggacado” in bacon as tightly as possible, holding the bacon in place with toothpicks (be careful not to pierce the yolk, though!).
Heat the oil in a deep-fryer to 350°F. Using a slotted spoon, very carefully lower the “eggacado” into the oil and deep fry for 3-4 minutes, until the bacon looks crispy. Remove from the oil and set on a rack to drain. Using a pastry brush, glaze the bacon with honey. Leave to cool slightly, then cut along the fault line in the avocado. Sprinkle egg with a little salt and pepper.
