This recipe is an easy Thanksgiving side dish filled with crunchy walnuts and sweet brown sugar and cinnamon.
2 long yams
2 Tbsp. brown sugar
2 Tbsp. orange juice
1 tsp. cinnamon
Topping:
¼ cup brown sugar
¼ cup walnut pieces
2 Tbsp. butter, melted
½ tsp. cinnamon
Place yams in a pot and fill with enough water to cover them. Bring water to a boil and cook until they have softened. Remove from water and cut into 1½”
slices. Slide the peel off and place them on a greased baking sheet. Remove sweet potatoes from water and cut them into 1 1/2″ slices and place them on a greased baking sheet. Sit end pieces to the side. Use a spoon to scoop out the center of each slice, making sure not to go through the bottom. In a bowl, mash the scooped out portions and the end pieces together with the brown sugar, orange juice and cinnamon. Stuff each slice with the filling. Make the topping by all the ingredients together. Pour the toping over each slice. Bake at 350°F for 30 minutes or until topping is bubbling. Remove from oven and serve.
